Hanging Weight is a weight the butcher gives us after the animal has been processed; blood drained, head, hide & some organs removed. The hanging weight is usually about 60% of the live weight.
The take home weight after processing is between 30-35% of live weight and 50-60% of hanging weight.
Whole beef - 300-400lbs
